Aunt Rachel’s Secret Salsa
Tomatoes
Fresh Cilantro
Green onions
Green peppers
Minced garlic
Lemon Juice
Salt to taste
Aunt Rachel says to mix these ingredients together until you like the way it tastes. There’s really no measuring involved.
Strawberry Jelly
5C smashed strawberries 4T Lemon juice
1T Margarine
7C Sugar
1 (1 3/4 oz) pkg Jel-ease
Bring berries and lemon juice to a boil. Add sugar and butter
Let roar-boil 3 min.
Pour into jars
Makes aprox. 9 8 Oz. jars
Aunt Carolyn’s Chicken Taco Salad
Boil brown rice with tomato and Chicken Bouillon 40-45 minutes
Boil & shred chicken
Season ckn with taco seasoning
Toss chicken & rice and add 32 oz. black beans
16 oz. Corn
May add olives & cheese
Combine with shredded lettuce, sour cream, tortilla chips & salsa
Or
For Enchiladas Roll in tortillas; pour enchilada sauce over the top.
Aunt Cathy’s Chicken McNoodle
1 whole chicken or 4 whole ckn breasts
1 8 oz. pkg egg noodles
1 C sour cream
1 can cream of mushroom soup
1 can cream of ckn soup
Salt & pepper to taste
2 C (Petreige Farms) herb stuffing mix
½ C butter melted
Boil ckn until tender – save broth
Cook noodles in broth (add more water if needed)
Cut ckn
Combine ckn & noodles, sour cream, soups, salt & pepper
Pour in 13X9 pan
Mix stuffing and melted butter and sprinkle on top
Bake 20 Min 350 degrees
